Smashburger Tacos ๐๐ฎ (with my go-to @MadeInCookware Carbon Steel Griddle)
Ingredients
- 2 yellow onions
- 2 tsp salt
- 1 tbsp butter
- 2 tbsp olive oil
- 1 cup mayonnaise
- 3 tbsp ketchup
- 1 tbsp Dijon mustard
- 2 tbsp pickle juice
- 2 tsp Worcestershire sauce
- 2 tbsp caramelized onions
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 lb ground beef
- 8-10 small flour tortillas
- Cheddar cheese slices
- romaine lettuce
- pickles
- 2 tsp seasoning salt
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- neutral oil
Steps
- In a griddle or pan over medium-low heat, melt the butter with the olive oil.
- Add the diced onions and salt.
- Cook the onions low and slow, stirring every few minutes and adding a splash of water every 15 minutes, until deeply golden and jammy.
- In a bowl, mix together all the burger sauce ingredients until smooth.
- Refrigerate the burger sauce until ready to serve.
- Combine all the burger spice mix ingredients in a small bowl.
- Roll the ground beef into small balls, about 2 to 3 tablespoons each.
- Press each beef ball firmly onto a tortilla into a very thin layer reaching the edges.
- Season the beef lightly with the spice mix.
- Heat a lightly oiled section of your griddle or another pan over medium-high heat.
- Place the tacos meat-side down and press gently for a good sear.
- Cook undisturbed for 3โ4 minutes until deeply browned and crispy.
- Flip the tacos.
- Top each with Cheddar cheese and cover for 1โ2 minutes until melted and the tortilla is lightly toasted.
- Top with burger sauce, caramelized onions, lettuce, and optional pickles.
