Chocolate chip banana muffins
Ingredients
- 3 bananas
- 1 1/2 cups all purpose flour
- 6 tbsp unsalted butter
- 1/2 cup granulated sugar
- 1/3 cup brown sugar
- 1 egg
- 3/4 tsp baking soda
- 1/2 tsp baking powder
- pinch salt
- 1 tsp cinnamon
- 1 tbsp vanilla bean paste or vanilla extract
- 1/4 cup sour cream or whole milk Greek yogurt
- 1 cup semi sweet chocolate chips
Steps
- In a mixing bowl, roughly mash the bananas.
- Add the brown sugar and granulated sugar, then mix well to combine.
- Crack in the egg and mix for 2-3 minutes until the mixture turns a light pale color.
- Add in the butter, vanilla bean paste, and sour cream, and mix until well combined and blended.
- In a separate bowl, mix dry ingredients: all purpose flour, baking powder, baking soda, salt, and cinnamon powder. Mix to combine.
- Add dry ingredients to the wet batter. Gently fold in the batter.
- Add chocolate chips and mix to combine. Do not over mix the batter.
- Let the batter sit at room temperature for 1 hour undisturbed before baking.
- Evenly distribute the batter into the lined muffin tin.
- Preheat oven to 425°F. Bake the muffins for 5 minutes.
- Without opening the oven, change the temperature to 375°F and bake for another 15 minutes or until a toothpick comes out clean.
- Let cool completely before serving.
