  • 1.5 tsp ground coriander
  • 1 tsp ground cumin
  • 0.25 tsp cayenne pepper
  • 0.5 cup passata or tomato puree
  • 1 cup tomatoes, chopped
  • salt
  • 6-7 cups spinach, chopped
  • 2 cups cooked chickpeas, drained
  • 1.5 cups vegetable broth or stock
  • 0.5 tsp ground black pepper
  • 1 tsp olive oil, for drizzling

Steps

  1. Step 1: Wash the quinoa thoroughly until the water runs clear, then soak in water for about 30 minutes.
  2. Step 2: Drain the soaked quinoa and let it sit in a strainer.
  3. Step 3: Drain the cooked chickpeas and let them sit in a strainer to remove excess water.
  4. Step 4: Heat a pan and add olive oil, onion, carrots, and 1/4 teaspoon salt.
  5. Step 5: Fry on medium to medium-high heat until the onions and carrots are golden brown and have shrunk in half.
  6. Step 6: Add the chopped garlic and fry for about 2 minutes or until fragrant.
  7. Step 7: Add the turmeric, ground coriander, ground cumin, and cayenne pepper, and fry for a few seconds.
  8. Step 8: Add the tomato puree or passata, chopped tomatoes, and salt to taste, and fry for about 3 minutes or until the tomatoes break down into a thick paste.
  9. Step 9: Add the chopped spinach, mix well, and allow it to wilt for about 1 minute.
  10. Step 10: Add the soaked quinoa, cooked chickpeas, and vegetable broth, and mix well.
  11. Step 11: Bring the mixture to a vigorous boil.
  12. Step 12: Cover the pan, reduce the heat to low, and cook for 20 to 25 minutes or until the quinoa is cooked.
  13. Step 13: Uncover the pan and increase the heat to medium or medium-high.
  14. Step 14: Fry for 2 to 3 minutes while stirring frequently to cook out excess moisture.
  15. Step 15: Turn off the stove.
  16. Step 16: Add freshly ground black pepper and a drizzle of olive oil, mix well, and serve hot.
