This is definitely the best tofu recipe for tofu haters

Ingredients

  • 50 ml low sodium soy sauce
  • 300 g extra firm tofu
  • 3 tbsp breadcrumbs
  • 2 tbsp nutritional yeast
  • 1/4 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • salt
  • pepper
  • 1 tbsp olive oil
  • 1/2 onion
  • 1/2 jar sun dried tomatoes
  • 2 cloves garlic
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 1/2 tsp chili flakes
  • salt
  • pepper
  • 180 g dried orzo
  • 700 ml vegetable stock
  • 4 tbsp nutritional yeast
  • 100 g chickpeas
  • 2 handfuls spinach
  • 2 tbsp fresh basil
  • 150 g silken tofu
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • salt
  • pepper
  • 50 ml water

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Press the extra firm tofu.
  3. Slice the pressed tofu into 3 even slices.
  4. Place the tofu slices on a lined and oiled baking tray.
  5. Brush the soy sauce over the tofu slices, applying it twice.
  6. In a bowl, mix the breadcrumbs, nutritional yeast, smoked paprika, garlic powder, dried thyme, salt, and pepper.
  7. Coat each tofu slice on all sides with the breadcrumb mixture.
  8. Return the coated tofu slices to the baking tray.
  9. Sprinkle extra breadcrumb mixture on top of the tofu slices.
  10. Bake for 25-30 minutes, flipping halfway through.
  11. Make the tofu cream: blend the silken tofu, nutritional yeast, garlic powder, salt, pepper, and water until smooth.
  12. Heat the olive oil in a pan over medium-high heat.
  13. Add the onion to the pan.
  14. Cook the onion until slightly translucent.
  15. Add the sun-dried tomatoes, minced garlic, dried thyme, dried oregano, and chili flakes.
  16. Cook until the garlic is browned and fragrant.
  17. Add the dried orzo to the pan.
  18. Stir to coat the orzo with the ingredients in the pan.
  19. Pour in the vegetable stock.
  20. Reduce the heat to a simmer and cook for 20-25 minutes, stirring frequently.
  21. Once thickened, add the nutritional yeast, tofu cream, and chickpeas.
  22. Stir to combine.
  23. Continue cooking for 10 minutes, or until thickened to your liking.
  24. Stir in the spinach and freshly chopped basil.
  25. Slice the tofu cutlets.
  26. Serve everything together with fresh basil.
